The More You Eat, The More You...

Beans for dinner tonight. We don't have any meat or protien in the house at all. Except for chicken thighs (which Phillip won't eat because it's dark meat) and beans (which Phillip won't eat because they are beans). It's a good thing I like beans because I'm starving right now. Not literally, of course.

Goals for tomorrow:
  1. Search for a month's worth of recipes online and in cookbooks. The easier, the better.
  2. Make list of all the groceries we need for said recipes
  3. Plan out recipes on a day -to- day basis. Cook them no matter what. Even if Phillip works the late shift and can't eat when I do. I can always re-heat something for him when he gets home.
  4. Think of items to buy to bring to new job for lunch. There may not be any places to go to buy something, so be prepared.
  5. Find coupons that will save money

I think that's pretty reasonable. I am pretty tired of Phillip saying "What should we do for dinner?" and me saying "I don't know. What do you want to do?" and Phillip saying "I don't know. What do you want to do?". It's frustrating and ends up costing us a lot when we eat out so much. We're doing pretty good here in Minneapolis, but in Boston we ate out almost every night. Not very cost effective.

I'm glad my mom-in-law is taking me grocery shopping in a week. I can load up on stuff so we'll be all set for another month or so. Who knows when we'll be able to get together with her again OR when we'll own a car. So better do it now to be safe.

Here's a recipe I just got from a co-worker. She had it for lunch the other day & it looked so good!

Chicken Paprika


Cooking spray
¾ tsp salt
1 sweet red pepper diced
1 tsp. paprika
1 onion chopped
½ cup chicken broth
2 cups mushrooms coarsely chopped
1 lb. skinless boneless chicken breast cut into strips
1 garlic clove
1 tbsp. flour
½ tsp. pepper
½ cup sour cream


1. Spray skillet with cooking spray and sauté garlic, peppers, onions and mushrooms for 5 minutes.

2. Add paprika, salt and pepper to vegetables and continue sautéing for 30 seconds.

3. Place vegetable mixture in bottom of crock pot, place chicken on top and then add the chicken broth. Cook for 6 hours on low.

4. Before serving, mix sour cream and flour together, then mix it with everything in crock-pot, letting it cook for an additional 5 minutes.

****To thicken sauce, add more flour.

* Serve on egg noodles or rice.

Unfortunately I don't have any amazing recipes to offer you but i have a friend that swears by this website http://www.cookinglight.com/cooking/mp/0,14089,,00.html

However, I haven't tried anything personally from it.

p.s. Did you know you can buy groceries on Amazon? I'm actually kinda surprised by that, but i prob shouldnt be.

Hey-
When we lived in Mpls we ordered from Simon Delivers.com. Delivery was free if you spent over $75, and they can deliver even if you aren't home, they leave everything in coolers. Most things aren't that much more expensive than Rainbow, and they have AWESOME produce.
