Bread Puddin' Redux

i finally got around to making bread puddin', which we ate for breakfast this morning. oh, man, it turned out so tasty! i went over all the recipes that were given to me, as well as ones on allrecipies.com, and decided on this one:

INGREDIENTS:

* 1 (1 pound) loaf white bread, torn into small pieces (i used crusty french bread)
* 1 quart hot milk
* 3 eggs, beaten
* 2 cups white sugar
* 2 tablespoons vanilla extract
* 1 cup golden raisins (i left the raisins out because i hate them)
* 3 tablespoons margarine

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large mixing bowl, pour hot milk over bread. Blend eggs, sugar, and vanilla. Stir egg mixture into the bread mixture and blend well. Add raisins. Mix well.
3. Melt the margarine and pour into a 9x13-inch pan. Pour bread mixture over margarine. Bake for 40 minutes, or until firm and golden brown. Serve hot or cold.

i had to bake it for about an hour, but it still turned out custardy and delicious. i also added some cinnamon to the mix, too. i'd like to make a sauce to put over it next time i make it, just for that added goodness. this was seriously tasty. you should come over and have some!

on a different note, can any of you lovely women in Mpls recommend a PCP/Gyn in the downtown/uptown area? i made an appointment in december with a doctor in St Paul (duh! why did i do that?) and i now realize that i can't get there without a car. so i'm desperate to find another doctor that's easily accessable. so let me know. i'd appreciate it.

Can't help with the doctor question, but I can add my two cents about bread pudding. If you don't like golden raisins, try adding some dried cherries, cranberries, apricots and/or toasted pecan pieces next time. Mmmmmm!

Dried cherries are absolutely my favorite dried fruit. I put them on my granola every day.

There is a clinic in Calhoun Square that you could check out, or a Fairview clinic on 38th Street and 42nd Ave. Both of those should be easily accessible by bus from your location. Good luck!

hey hue-

i was reading a recipe for bread pudding using donuts the other day! i told my husband about it and he said "ew!", but i know it would be tasty. and there would be no added sugar because it's all in the donut! sweet.

I generally do not like Bread pudding, but the Donut BP is truely amazing.

Paula Dean has a recipe using Krispy Kreme donuts, but I prefer this one...

hue-

that episode is on right now! i'm going to watch it and let you know what i think. i'm not a fan of the KK donut (i'm a dunkin' donuts girl), but i'm sure it can be done with any cake donut.
